Nestled in Rochebrune, Le Saint-Nicolas is a gastronomic address near the centre of the village of Megève.
Dressed in local wood and stone, we promise you a warm and inviting atmosphere.
The open kitchen allows you to enjoy the ballet of our team during service, and also gives you the opportunity to interact with the chef, who will tailor to any special requests.
The inspirations of our chef Marvin Lance are rooted here, in the land of Mont-Blanc, and he is delighted to share with you the authenticity and power of this terroir. The Côtes d’Armor and Calvados are his roots, and as such, his culinary identity is imbued with subtle hints of the sea.

Our chef Marvin Lance
Originally from Brittany and Normandy, and the grandson of a butcher, Marvin Lance was immersed from a very young age in a culinary tradition where sharing and generosity are essential. This upbringing led him to discover cooking. Fascinated, he began his training in Brittany at the age of 15 under Jean-Pierre Crouzil**
He then joined the kitchens of Stéphane Gaborieau* and Thibault Sombardier* in Paris.
Drawn to the mountains, he moved to Megève, where he spent five years working alongside Julien Gatillon at the restaurant Le 1920**.
Rising through the ranks to become sous-chef.
In October 2020, at the age of 26, Marvin Lance took the helm of Le Saint-Nicolas restaurant, where he could finally express his own culinary vision. Rooted in childhood memories and influenced by the Savoyard terroir, he creates a cuisine that blends authenticity and creativity, between the sea and the mountains.

An ode to the terroir of Savoy
We engage with them, cultivating a relationship of trust.
We are committed to listening to and supporting our partners in a spirit of sustainable craftsmanship. More than just a short supply chain, we favour direct sourcing.
We collaborate with local artisans: potters, blacksmiths, granite carvers from Mont-Blanc, wood turners, and ceramicists.
For producers, we prioritise: local vegetable growers, farm cheeses, charcutiers, breeders, millers, herbalists, beekeepers, snail farmers, and winemakers.
The cheeses on our trolley form a carefully thought-out selection.

The concept of our whine list is built on a valuable exchange between Laeti, our head sommelier, and Marvin, our head chef. This collaboration ensures a harmonious
connection between our wines and the chef's culinary identity.
To respect the winemakers is to acknowledge the humanity and richness behind every glass of wine.
It is to honour their passion, the result of long and complex work rooted in the traditions of French craftsmanship.
It is crucial for us to build strong relationships with our winemakers and to recognise their essential role in contributing to the experience of dining at Saint-

It is also important to highlight the presence of numerous references from biodynamics, which embody respect for biodiversity and its ecosystem.
